Does anybody have a good quick fish cakes recipie? Need to make them for a group of 6!  Thanks.

We do this one and everyone likes it quite well:1 tbsp. butter
1 tbsp. oil
2 cups crushed corn flakes, divided
2 cups flaked poached salmon
2 tbsp. fresh parsley, minced
3 tbsp. mayonnaise
3 tsp. Dijon mustard
1 tsp. hot pepper sauce
1 tbsp. lemon juice
1 egg
1/2 tsp. paprika
Salt and pepper to taste

Spicy Mayonnaise:
1 cup mayonnaise
3 tbsp. hot sauce
1 tbsp. lemon juice
Salt and pepper to taste
 
Directions: 
Combine 3/4 crumbs and the rest of the ingredients. Form mixture into 6 or 8 patties, adding more crumbs if needed to thicken. Dip salmon cakes into remaining crumbs to coat. Melt butter and oil together in a medium saucepan. Cook cakes until golden brown, about 4-6 minutes on each side. Serve over salad green with spicy mayonnaise. 
Makes about 4 nice sized cakes... I'd double the recipe for your bunch... Enjoy!

mix a tin of salmon or tuna (maybe 2 tins of tuna or 1 large tin of salmon) with cold mashed potato, add whatever herbs you fancy, mash it all together and shape, dip in milk or beaten egg and breadcrumbs and shallow fry. simple but yummy
