I love most fish.

If you like curry, naomi ...... roll the fish in flour and your fav curry powder then deep fry ... delicious
Naomi, Tesco do a marvellous Goan curry paste to mix with single cream. J'adore Goan fish curry.

Also, Google Zarzuela for a lovely Spanish fish stew.

we do our scallops with black pudding - very good indeed.
It was slow roasted lamb shank in red wine with shallots and dauphinoise pots but now it Thai red or green chicken curry with fragrant rice. I usually buy kits for the sauce and a tin of coconut milk. If I don't make the rice myself I use Veetee thai jasmine rice. I think its the best ready rice around.
I've rarely cooked fish, aside from fish fingers, and I can't seem to get the microwavable version of those any more. I may have forgotten past successes but IIRC the one time I tried to cook trout I messed it up and ended up with trout fishcakes :-)

I like most fish but prefer the oily tasty ones to the bland white type, which only seem to be given enough taste when you put a fatty batter over them.

I think maybe it is difficult to beat a good smoked salmon, but as mentioned there are many good fish dishes.

No, if I want a decent fish meal I go to a decent fish restaurant and get the chef to rustle up a dish of fresh fish.
Seafood paella is lovely.
hake..baked..
Smoked mackerel - barbecued
Trout...cooked in foil in the oven with butter, herbs and apricots.

Whitebait.....tossed in seasoned flour then deep fried for a couple of minutes.
I'm really missing out as I find all fish (except shellfish which I love) really boring. All white fish tastes the same to me.
I can't eat shellfish at the moment, while I'm on the boring low-fat diet :0(
I had Scallops, black pudding and cauliflower puree the other day. Not keen on black pudding but it's a great combination.

I also love Coquilles St. Jacques.

I like most fish/seafood.
Love Dover sole -pan fried, salmon poached but best of all tubot cooked by someone else!
Goan fish curry is the absolute dog's wotsits...........
Just a question re. pan-fried....
