Why are supermarkets allowed to sell mayonnaise when its made from raw eggs and not refrigerated when sold?

Because it is made from pasturised eggs and contains enough acid to prevent baterial growth.

The eggs are mixed with oil on a 1-10 basis which does preseve it , major plus is an air tight container, which will keep it fresh for year plus
