Agneau au sel is delish, Rev, lamb that is brought down to the estuary and fed on the sea grasses.....Northern France and the Solway Firth for such lamb. Then there is Agneau du Lait, lamb fed solely on milk (much younger than calves), the meat white.............
I don't see the logic of refusing veal yet accepting dairy produce. If you have milk in your tea/coffee, or an ice cream, or cheese, the offspring that is not drinking that milk has to be disposed of somehow. Should it go to waste ?
Sounds like a trip to Normandy in May - wash down with some local Calva - there used to be a brilliant shop in Rouen just across from the west door of the cathedral and down towards the bridge over the Seine, possibly still there.
