I'm also doing roast chicken tonight, there will be three of us. It's a medium/large chicken which I bought from my lovely local butcher. There will be one compete side of breast meat which I am going to use tomorrow. I shall cut it into two pieces, then top with a mixture of ham and leeks, then the whole thing will be wrapped in thinly rolled puff pastry and baked quickly in a very hot oven. Any other smaller bits of meat will be picked off and mixed with leftover gravy and veg, then put in the freezer to make into a pie in a week or two.
Then the frame will be boiled to make stock or soup. Waste not want not!
