mint choc chip cheesecake??

Mint baileys, lime jelly, 3 packets of cream cheese, small amount of whipping cream, smashed mint aero.

Make up lime jelly with 1/2 pint of boiling water set aside to cool, soften up cream cheese, add cooled jelly, add a good glug of baileys or more, add whipped cream, add crushed aero, pour on top of biscuit base ( I have used digestives, choc chip cookies and ginger biscuits but have found the cookies work best)

leave to set

i would think it's to add some green, and also help to give a slightly firmer, 'set' texture?

i'm going to do one without the baileys too, for the kids. Will it work with some peppermint extract?
