Lean minced lamb

Day off today my brood will eat anything tasty - (exccept son's won't eat offal - that's da's dept they say!) Took 1kg of lean minced lamb out of the freezer last night what shall I do with it? I've been shopping, shall I do Keema curry or moussaka or a shepherds pie? We've had beef in red wine casserole and fried chicken and baked potatoes so far this week. If I ask them they just shrug and say 'I don't mind' . I've no skewers for kebabs but I could do meatballs...help!

4 aubergines cut lengthways, score in a criss cross pattern, salt and drizzle with olive oil on them. cook for 30min at 200c. meanwhile heat 2tbsp olive in a pan add 1 chopped onion, 4 garlic finely chopped, 1 large red pepper chopped, plus 1 1/2 tsp ground cumin, 1tsp cinnamon, 1/2tsp grated nutmeg, 1tsp spanish paprika and a pinch dried chillies. fry gently for 10min. added 500g minced lamb fry until brown. Add 6tbsp tomato sauce and simmer for 5min. remove aubergines. raise heat to 220c scoop out flesh and stir into lamb mixture with salt and pepper to taste. spoon mix into aubergine skins, sprinkle with grated cheese and cook for 9 -10min until golden brown

Ooh ros that sounds lovely - yes I have aubergines in case I did a moussaka, or my son's girlfriend comes and I make her that baba ganoush stuff as she's a vegetarian. Unfortunately I can't do that today as my sons are each bringing a friend home for dinner plus hubby too, and I only have two aubergines but I shall definitely keep that recipe for another time thanks
