Sounds lovely, but wouldn't have thought it needed a sorbet. If you definitely want to have one then before the turkey...

No fish, but 5 courses. Do I serve it between all of those? Would it not be a bit much/overkill?

just between the starter and the turkey you can get away with just the once as there are no strong flavours involved.

We often have a sorbet instead of a heavy pud, and before the cheese.
Don't take this wrong...but there is an awful lot of cheese in your menu. Just an observation.

how about a blue cheese sorbet, just to complete the theme
as it's Christmas, stilton sorbet sounds good.
