chips fried not oven chips. How much does a deep fat fryer cost these days because I'm fed up with oven chips!!

But mrs cook would say that fried mashed potato is the only way to fry potatoes. Lucky that she is in Oz at present.
What is the knack of doing saute potatoes. mine always seem to go soggy.
garam masala, a blend of spices stirred into curry at the end of cooking.

rough them up when they're warm like for roasties and leave them to get cold cupid

use hot oil, I do 50/50 butter and olive oil, fry quickly and serve straight away
stewey, curry powder should be cooked before use, garam masala precludes this.

and if your cooking them from par boil , make sure they are dry

Agree.... left over spuds sliced and fried. YUM YUM with brown sauce.
Cubes slightly par boiled, the browned off, wok's ideal, with onion and possibly bits of smoky bacon. If you the pour a couple of beaten eggs over, it becomes a German dish Bauernfruehstueck, farmers breakfast. Minus the eggs and bacon, the kids called it caravan chips, and still do!
Seems that the are linguistic and regional differences here. What do people mean by a teacake?

to me a tea cake is a fruit bun/roll that you toast and have with butter. think people also call those marshmallow things teacakes as well
If you were here in cow country of the mountain west of the U.S., you'd have freshly sliced (about 1/8 inch) red potatoes placed directly into a cast iron skillet with perhaps 1/4 inch of hot lard (yes lard!) and fried just 'til the edges turn brown and crispy. Usually served for breakfast with bacon and eggs or even steak and eggs. Hot biscuits (no, not cookies) on the side with fresh butter and honey or a variety of last fall's fruit preserves (occasionaly black strap molasses). A cowboy is good for nearly a days work with that kind of breakfast...
Thank you mccfluff, we agree, my OH reckons a teacake as what you use for a ham sandwich, ie what we in the NW would call a flour cake or barm cake and in other parts of the country are called all sorts of things. It seems to be a Yorkshire thing to call it a teacake. A teacake is sweet with fruit in it in my opinion!

fried potaatoes means thick cut CHIPS...yum yum, drenched in salt and vinegar
