Has anyone got any quick, easy summer recipes, apart from just salad.  We both work til about 6.30 so by the time were home and bathed etc its getting quite late.   Thanks everyone  ps dont like fish much only fresh tuna.

Grilled minty lamb chops, new potatoes (jersey royals if you can get them) and fresh peas.
umm, i think a omelette is a really tasty but quick meal.! 3 eggs , some cheese ham fried potatoes parsley sweet pepper or anythink you want to put in always tasts good. and you can put it with a salad , beans , boil some new potatoes cut them up then fry them! fills you up but is all healthy. Or you can make a stir fry , get some chicken breast fry them then add the stir fry mix and some sauce! is a great meal.

Hmm grilled minty lamb chops sounds lovely, we don't eat much lamb, i always forget how nice it is.

Omelette is one of my faves.  Youre right flower90 anything can go in an omelette.

Ha ha Boo youre a person after my own heart.

Do a big load of boiled potatoes. Serve them one night with salad, then try these:
Serve with fish or chicken and peas.
Mash some with corned beef and onion, then fry in a bit of oil for corned beef hash, and serve with lots of bread.
Mash some with cheese and onion, then put grated cheese on top and cook in the oven til the top goes melted and crispy - cheese pie is lovely!
Bubble and squeak - mashed potato with cabbage and any other left over greens. Serve with bacon.

Boiled potatoes keep for a few days in the fridge and reheat easily. Once you've cooked a load, the above ideas will only take about 10 minutes or so. Thank goodness for potatoes!

HI Mistopheles what a great reply. I didn't know spuds kept that long.  I will definately be trying all of those and some of my own inventions.  Thanks
Try fresh tuna it can be pan fried I usually do mine in butter and fresh parsley takes about 5 minutes or if you have a bit longer can be done in the oven wrapped in foil or on a barbie very quick.Have you tried looking on the bbc website www.bbc.co.uk get loads of ideas form therecos they have all the tv cooks recipes.

thanks billearly i'll try the tuna idea, we usually fry it and have it with salad.  I never thought about going on the bbc website so thanks for that too.
Hi Pixi  an after thought try swordfish cooked the same way as tuna just as quick this fish has a solid composition and is very tasty not to fishy .

Hi bill  thanks for the swordfish idea.  I think I can order it at the local morrisons so may give that a try too.
