It's best to pick the mange tout when they are just ripe,not ripe or overipe.
Tray freeze them,that is flat, and not on top of each other on a flat tray or baking sheet.
Once they are solidly frozen you can transfer them into a storage box.Mange Tout should freeze well,as they are quite thin.
