Noodle dishes in Goa - Help!!!

Last year I went to Goa, and i had some AMAZING noodle dishes! Does anyone have any idea as to how I could replicate these?

 

I imagine they are quite simple but what things go into it?!

If you had it in Goa it will be primarily Indonesian food the basis of which all their dishes are based on Mustard seeds, Red or green curry paste, Lemon grass and coconut milk, then you can really throw anything into the wok with it to suit your taste. Straw noodles are usually best but are an acquired taste. Chinese chow mein noodles will do and the best are available from Chinese supermarkets of which every town has one hidden away somewhere
