Does anyone have any cheap and fairly easy vegetarian recipes that student on a budget could cook? Would help if they weren't too high in fat either. Thanks!

For more on marking an answer as the "Best Answer", please visit our FAQ.one of my all time favourite recipes is Roasted vegetables with cous cous and feta cheese. You can roast any veg (if you buy it when it is in season, it will be cheaper) I use carrots, swede, peppers, onions etc in winter, roast in a fairly hot oven for about 40 minutes (I throw mine into a baking pan with garlic, splash of olive oil and whatever herbs I fancy. Cous cous is really easy to prepare and cheap. I boil some water, add a stock cube and then pour over the cous cous cover with a plate and let it sit until all the water is absorbed, sometimes you need to add a bit more water. Then I serve it up and sprinkle with crumbled feta cheese . Feta cheese can be expensive in supermarkets so always buy mine in places like Lidl. Oh and if there is any left over, is is just as nice cold the next day .
Put some pasta on to boil.
In another pan put some garlic, onion, mushrooms, tomatoes or whatever other veg you fancy and stir fry them with a tiny drop of oil. Then chuck in a tin of tomatoes and stir ir all up. Simmer gently whilst the pasta finishes cooking.
Drain the pasta and add this to the veg mixture.
Eat!
I like to put coriander leaves on top just before I eat it, but that's optional. This dish can also be eaten cold the next day.
