Poaching Chicken

I am poaching some chicken thighs in the slow cooker. My digital probe says that they are 164F, That is 1 degree below the recommended temperature, Is that close enough? They have been on for 1.5 hours.

I doubt if your probe is that accurate
Temperatures in recipes can, more often than not, be looked upon as a rough guide. Anything like a difference of e.g. 10°C isn't going to matter much. Agree with Dzug, and would add that oven thermostats are often not all that accurate either.
