How did the Cowboys of the American West in the last half of the nineteenth century make coffee? Did they use a percolator or just boil it up in a pot? Cheers.

They normally just gheated water and coffee grounds in a jug.
as an add on to this answer....when I was in the navy as a chef we used to buy large tins of maxwell house ground coffee when trading around the US coast,unfortunately one piece of equipment we did not have was a percolater!so we used to make "cowboy coffee" ie in a large pot boiling on the range and to stop it becomming bitter we added egg shells to it.....it works!
