I will be opening a tin of corned beef for tea.   I simply put what I will not use on a plate and cover with cling film.   It lasts for ages.

Enjoy

Denise S. seems to have the solution, my solution is when I open it I scoff it thereby removing any possibility of spoilage.

Hey it works for me, I've never had Corned beef poisoning!
Try Marks and Spencer Traditional Corned Beef, I think it's called. About 150g packets in the chiller. For corned beef it's the lowest fat I've seen (about 8%) and there won't be any left to go dry.
Wrap any left overs with foil or clingfilm - and put in the fridge.

If you store any left over cold meat in an air-tight container it will keep it from going dry.
