Bought a punnet of plums over a week ago. They were hard but, (foolish me) I thought they would ripen......they didn't!!! What'll I do with them now? Please don't advise throwing them out. I hate waste. Thank you.

Should I peel first?
Plum jam? As long as they`re ripe, I would have thought they`d be OK if they are a bit hard because they will boil down. Last time I made plum jam, I found a jar of stem ginger in the cupboard and tipped some of the syrupy juice from it in the jam and it was really good.
We make our own prunes... delicious!
Start with slightly under-ripe fruit (of which you have a surfeit). Not totally under-ripe – not hard and green – but not soft and sugared either. They’re going to sweeten up a lot as they dry, so you need them to start out on the tart side.
Wash the fruit and cut each plum in half. Remove the pits then spread the fruit out on dehydrator trays and load up the machine. Dehydrate between 105-115º (F) for roughly 24 hours, or until prunes are shriveled and darkened.

Alternately, place them in your oven on baking trays with the oven set at the lowest possible temp... it'll take maybe 12 hours that way... still looking for very dark and very shriveled...
what about making a small amount of jam or a plum pie or steam pudding?
Plum crumble.
Considering the tone of some posts to-night re mumsnet I was a bit reticent in opening up this one lol! -but -stew them with some brown sugar using either red wine or fruit juice, no need to peel them lovely with vanilla icecream.
I bought some plums which were also hard. I left them on the cupboard for a few days and to me they'd ripen a bit, because they tasted sweeter than the day I brought them home. So perhaps give them a couple of days, they might taste better.
They make a lovely crumble
Rinse them and slice in half -remove the stones. Drizzle a little runny honey over them and pour a Yorkshire pudding mix over them, as you would for toad in the hole and bake in the oven.

My very favourite plum recipe followed by plum crumble!
I do hate it when you buy "ripen at home" plums , they go from very hard to rotting in about 4 days.
