Help Please, Game Casserole

I have had a game casserole in my slow cooker since 10.00 am. It is cooking in half a bottle of South African Merlot and contains, a selection of game, carrots, red onion, leeks, parsnips, beef stock, tomato puree and a bouquet garni. I've just tasted the sauce and it tastes quite bitter.

I don't think the alcohol had 'evaporated' or whatever the term is. I floured and fried the meat first and sauted the onions. It looks lovely but doesn't taste too good at the moment.

Is there anything I can do to sweeten it up or shall I just leave it and hope for the best?

Whenever cooking anything in red wine add two squares of dark chocolate! You'll notice the difference!

get ours locally shot shoota, never bother to hang them, they're a strong enough taste as they are for me

I think it falls outside the definitions of what critters you can kill and when in the Game Act Tills, which mostly covers birds

Sorry Till I am having problems with my dog and next doors fireworks.
I accept that venison is classed as 'game' meat although I think that it is only because it comes from a quarry species.
It was the use of the term 'stalking' in connection with 'game' that I picked up on: you go stalking deer and thereby produce venison whereas you go shooting game and thereby produce grouse, pheasant and partridge. Pigeon are classed as vermin and ducks and geese as wildfowl.
Shooting semantics, forgive me once again.
