Interesting story on how these "fritters" came to be known as hush puppies... At least in the South (anything below the Mason/Dixon Line) according to my grandmother; When preparing the delicasies for deep frying in two inches or so of hot lard, the first ones in were a kind of test to see if the grease was hot enough. Often it wasn't and they came out soggy with grease and nigh on unedible. The hounds and other dogs normally found on farms always gathered around the kitchen door (they were outside dogs) because of the smells and the hope for something extra to eat. The lady of the house opened the back door with the unusable bits on a plate and threw them out, saying to the baying fox hounds, "Hush puppy!"... I wish I could include the inflection and southern drawl to imitate what it really sounded like, but I hope you get the idea...
