I have peculiar loathing of rice salad but at least with a curry kick I might be tempted......and that one doesn't look as bad as some of the heinous offerings I've encountered. Thanks Shoota
Not seasonal now but roast parsnip and chestnut salad, drizzled honey (or some cut maple syrup and basalmic) with rosemary and thyme, brilliant with lamb chops......
Tricolore and mixed leaves/watercress are both raw :-(
I can see couscous and roasted med veg featuring.
Roasted parsnips make a lovely salad DTC, I make one with walnuts and a sherry vinegar dressing but as you say it's not seasonal and I do like my seasons :-(
Rice served with lightly steamed chopped green beans with fresh or tinned apricots in juice also roughly chopped makes an interesting salad. If appropriate fresh chopped mint leaves may be added.
I really like delia smiths baby summer veg with lemon vinaigrette. All the veg are steamed and you can add or subtract any you particularly like or dislike. It's nice cold or warm.
I love couscous, particularly if it has pine nuts or something a bit crunchy in it along with tangy bits like juicy sultanas, dried cranberries or chopped dried apricots.
Roasted Mediterranean veg always goes down a treat in this house, warm or cold.
One of my favourite grain salads is Chopped cooked beetroot with roasted peppers, cous-cous and lashings of Horse Raddish (Fresh Grated or Ready prepared as a sauce).
Another goody is chopped spinach with cold plum tomatoes, boiled cold baby potatoes and a squidge of mustard mayonaise - all served with baby leaves - yum!
