Squashes tend to cook like potatoes but quicker, depending on the thickness of the flesh.
So like spuds, they do well for a dollop of olive oil then bake in the oven until tender and crispy at the edges.
I'll be round with a plate and a fork later.
I usually roast butternut after brushing it with olive oil. Then I scrape out the flesh and make soup or have it mashed with butter, pepper and a little horseradish which goes well with a roast.
