I went to see my mum today (she's great)

and...

she gave me a frozen pheasant and a frozen shoulder of lamb.

Now then, I have only cooked pheasant a few dozen times before, and always end up with a cider/apple/cream combo. Nice enough, but anyone got any better ideas that they've tried and tested?

and the lamb - unless anyone's got any better ideas, i'm thinking some kind of kleftico derivative...?

by the way, my mum says "hello".

Try this rather simple recipe... (Calls for wo pheasants, but just cut down all the ingredients for your one):

1 cup raw wild rice
1 can cream of chicken soup
1 can cream of mushroom soup
1 can mushrooms
2 1/2 cups water
Water chestnuts
2 pheasants, cut up, floured and browned
1 pkg. instant onion soup mix
Mix rice, canned soups, water, mushrooms and water chestnuts in 9x13 glass casserole. Add pheasant. Sprinkle with onion soup mix. Cover lightly with foil. Bake 2-2 1/2 hours at 300 degrees.

ah clanad, you're adorable! my mum/mom'll be chuffed to bits!!

Why not just roast it - use the timings for chicken? Put a small peeled onion and a handful of fresh herbs inside the body cavity to keep it moist. Serve with the usual roastie style accompaniments and don't forget the bread sauce.
