Hi all can someone please tell me how to cook sweet potatoes and squash? When I done one was to
D bake in oven with a couple of knobs of butter but they both came out really greasy not good , help help help, thank you .
I would roast squash as described in the BBC link above. It makes a lovely autumnal dish before the winter root veggies come into their own. Alternatively add it to soup for a lovely smooth texture.
I make sweet potato hash. Coarsly grate sweet potato,heat some butter or bacon fat in a pan,add the grated potatoes,and some chopped onions or shallots. Cook until coloured. Have with eggs and crispy smoked bacon.
Parboil butternut squash,drizzle with olive oil and roast for 25-35 minutes...until the squash starts to get dark,crispy edges.
