Pavlova Information

All the bakers out there - have just made 2 pavlovas and they are cooling off until tonight.

However, when I was buying the caster sugar I noticed "golden" caster sugar - was tempted to buy but if I did what difference would it have made to pavlovas - I am assuming - colour. Thanks for answers.

Golden Castor sugar has a different colour (as you note) and a slight caramel flavour to it, but its not very strong.

An alternative for you to consider, you could also add a tiny amount of muscavado sugar - which will add a slight treacle flavour, but don't add that much.

Thanks DT - don't think I would use it - if you say there is a caramel flavour - to me that would make it even more sweeter.
