Pink salmon hasn't got as much flavour as red and I think the texture is not nearly as firm.

Red salmon is more expensive but worth it, in my opinion

Pink salmon is one species and is also known as the humpback salmon. Red salmon, on the other hand, is a common nickname for sockeye salmon. Both are Pacific salmon and are generally caught in the wild and not farmed as most of the Atlantic salmon on the market today. There is some difference in the varieties of salmon with the main difference being the amount of fat.

Many years ago a friend of my mother would serve up what purported to be red salmon, but in reality was tuna ( at that time dirt cheap) dyed with cochineal. My mother wasn't fooled.

My opinion is that the red looks more appealing that the pink. And tastes better. If you put one plate of pink salmon and one of red, I know which one I would choose.
