Ok, so i got my brandy snap tubes. What shall i fill em with.

I know you're supposed to put cream in them but any other suggestions ?

I`ve never eaten brandy snaps. I would have thought something like whipped cream with ginger or Baileys would be good.

My mum used to make a dessert called Ginger grundy. It was done on a crushed ginger biscuit base so i won't need that bit bit the topping went as follows

1/2 pint whipped double cream
1/2 tin crushed pineapple or finely chopped cubes....very well drained
5 level tablespoons of ginger preserve
2 teaspoons ground ginger
I used to use crushed ginger biscuits mixed with the cream. For extra special (but you can't make them too much in advance) you drip some sherry onto the ginger-biscuit crumbs - yummy!
I would use fresh double cream, whipped up and mixed with fresh raspberries
If they weren't out of season I'd agree with Janbee's suggestion, imported raspberries are totally bereft of flavour.

Stem ginger with a drizzle of the syrup whipped into the cream would be good.

Chopped candied fruit is quite a traditional addition but not to my taste.
Having seen your other threads I can see you want to get ahead with your prep.

Do not fill your brandy snap in advance as they will become soggy. Make up your filling and have it ready in a piping bag, it will only take a couple of minutes to fill them before serving.
