I currently have this bubbling away on the hob and have to say it really does deserve the high praise that Ummm and Eccles have heaped upon it.
I was trying to work out what it is that makes all the difference and I reckon it's partly down to the amount of butter used to soften the veg and brown the mince, not to mention the two types of mince and the pancetta.
Every time I stir it, I have another taste, I'll be surprised if there's any left by this evening...

It's lovely. I think the lack of tinned toms makes a huge difference.

I use less butter than the recipe says and more meat. Still quite a lot of butter though.

I don't use as much butter and like Ummmm, use more meat. It's always a hit in this house

Oh yes, I hadn't thought about the lack of tinned toms, the flavours are more concentrated without them.
I don't know about you Ummm, but I've never actually followed a recipe for this type of sauce before, just bunged in mince, etc, boiled it all up and had it with spaghetti.

Maybe I'll try it that way next time Rocky..less butter, more meat.
I can smell it now. It is a really awesome recipe and far, far superior to the mince and tinned toms Bol that gets served up in 30 mins.

I probably don't use as much butter as specified in the recipe but I tend to cook by eye with familiar recipes.
I'm having lamb steaks with Boulangère potatoes and veg.
If anyone wants to try another fantastic ragu,here is one by Anna del Conte. I've used this for years. It's from "The Classic Food of Northern Italy".

I did Boulangere Potatoes over Christmas, no sod liked them except me, so I ate the lot :)
I have Bolognese simmering as I type. The tomato sauce is made with frozen tom. pulp gathered from our garden and frozen a.s.a.p.. It makes a huge difference (also home-grown onions and most of the herbs). It's so easy to freeze fresh toms., if you don't have a garden you can buy in bulk when they are plentiful and cheap - must go and stir!
