What Can I Do With A Defrosted Chicken Carcass

Needed some room in the freezer. Now have a defrosting chicken carcass. Any ideas? Stock? How do I do that?

I tried searching kitchen for cookbook but couldn't find tried searching old and slow computer for recipe but could not find but searched Internet and this is close to what we do. Except did not flour the chicken, the recipe includes chicken, apple and cider the other ingredients we do not use. Serve with rice I prefer that to mash.
If you do not like sweet food you may not like.

If you decide to make stock break up the carcass first, meat hammer is useful. Sieve carefully for bone splinters.

You can use the carcass as stock for chicken broth, by adding 1 litre & half of water, chipped carrot, leek, pearl barley, or rice. Add 2 chicken stock cubes,with a knob of butter. Bring ti boil, and simmer for 1 hour, then ENJOY!!

Gosh you lot do ask a lot of questions! I think we use a dry cider.

@methyl...why do you refer to a "rotting" carcass? Freezing is the best way to preserve a carcass,and making a stock is the best way to make use of a carcass.
Binning it is a total waste. The most nutrition is in the bones. Use it...or send it to me!
PS...freezing small amounts of chicken bones until we have enough to make a good volume of stock is good practice...and not wasteful like chucking the bones in the bin would be.
Remember when the last of the Xmas turkey was eaten then the carcass was boiled up for stock and you ate turkey broth for the next fortnight?

Roast it in sealed foil for 30mins. Pour the fluid into a container to cool (dripping) season & spread on toast for brekkies. Chuck bones in hedge for renard.
