I think neck fillet is the best, not fatty, easy to cube up and very tasty.

Neck fillet is good for casseroles
Have a look at 'MAry Berry's special part 2 lamb tagine daily Mail online' receipe it is delicious. For some reason I can't get the link to work but just type it into Google
Incidentally neck of venison is also good in a casserole.

Lamb is young fresh meat, and does not need slow cooking. Now mutton is a different kettle of fish altogether - deeper flavour which responds well to slow cooking.
I like the leg best.Tesco have a good range of cuts at the moment
I use shoulder of lamb. You can cut the fat off but you need some fat for flavour. Its easy with a casserole to skim off the fat after cooking with a kitchen towel, or leave it to cool and scrape it off.
