1kg / 2.2lbs of potatoes, boiled in their skins the day before
2 to 3 tablespoons of butter
1 to 2 medium onions
salt to taste

In this recipe you can choose to either make one large roesti or 4 individual ones. Firstly peel the cooked potatoes and grate them through a coarse grater. Slice the onions into thin wedges . Melt the butter in a non-stick frying pan and add the onions and sweat them until they look glassy and transparent. Add the grated potatoes and the salt and stir through. Fry while stirring them around in the pan for about 3 to 5 minutes. Press together to form a flat cake and fry over medium heat until there is a golden crust on the bottom. Place a serving plate on the pan and turn the pan upside down, so the R�sti falls on the plate with the crust on top. Alternatively, toss the r�sti into the air and flip it like a pancake back into the pan, then slide it onto the serving platter and serve immediately. They are nice with fried bacon or cheese added to the mixture.
Traditional swiss Rosti is made with raw grated potato. You put the grated potato in a kitchen towel and wring out all the moisture before frying it in a heavy based pan.

Here's a recipe:

3 large or 4 medium potatoes, peeled
1 medium onion, peeled, halved
Salt and freshly ground black pepper to taste

Coarsely grate potatoes and onion, then press out moisture using a clean kitchen towel..

Heat up olive oil and butter in a heavy based frying pan.

Add potato mixture in even layer. Press down with spatula; sprinkle with salt and pepper. Cook over medium heat 8 to 10 minutes or until bottom is browned and crisp. Turn; cook until bottom is browned and crisp, 6 to 8 minutes more.

Never stir rosti!
