For more on marking an answer as the "Best Answer", please visit our FAQ.Many years ago in a pub called 'The Wild Duck' at Ewen, a village on the Wilts/Glos border, the landlord used to stick the rind of the finest Stilton in an earthenware crock about the size of a football and pour in some port, a process he continually repeated, the resulting strong-smelling amazing substance was spread on a supply of crackers on the bar, it was not only delicious, but also a sure-fire cure for a hangover, this was much tested by the Red-Arrow pilots from nearby Kemble.
I have always liked Roquefort and then St Agur as a substitute. I prefer blue cheese all the time but never liked Danish Blue in the UK. I always considered it had a soapy taste to it.
I went to Madeira last month and the buffet had large cubes of blue cheese with lumps of edam and other white cheeses. I opted for the blue thinking it might be local. I would swear it was Roquefort. It was fantastic.I asked a Dining room meeter/greeter if the cheese was local or imported Roquefort .
She went to the kitchen to enquire and came back with a 3kg catering box of St Catherines Danish Blue. I could hardly believe it was not Roquefort.
Very strange how cheeses of the same name differ in brand.
