Fresh Dairy Cream In Cakes

Years ago fresh cream cakes were marked with 'fresh dairy cream' Today the 'fresh' cream cakes bought in Supermarkets etc are whipped sweetened cream and do not taste anything like the real thing. Not having a bakers shop in the near vicinity (although I don't know if they use the dairy cream) I have to use supermarkets of which I have a choice of 4 different ones but they all use sweetened cream. Why?

The filling you describe is "stabilised cream"....it keeps its texture better and lasts longer in cakes over a period of several days - hence supermarkets use it. Proper bakers make cream cakes on a daily basis - so they don't need to have "keeping" properties.
In fairness they should indicate what they have done/added even if they have reasonable cause.
