I'd do the pickled veg, it all looks very tasty.
We're having crispy duck pancakes on Saturday, not as a starter but as a meal, it's a Costco boxed one and really, really nice.
I'm making the cauli couscous tomorrow, to have with salmon, bought all the ingredients this morning, hope it turns out as nice as it sounds.
