to make perfect rice (long grain) do as follows
put some oil in the pan just enough to coat the rice you are using ( handful of rice to 1 tbs oil) cook until rice starts to change colour (to a white colour) stirring all the time add pinch of salt and just cover rice with boiling water when rice has boiled cover and reduce heat to minimum if gas for electric just turn off heat altogether leave for 4- 5 mins(if using gas turn off) stir with fork and if still wet put lid back on and check in another couple of mins after about 15 mins with lid left on you should have perfect rice if not is your heat too high.
