To be honest Mazie I really don't know just put in what I had left over! I have since bought a soup maker and would just put all the ingredients in that, minus the Cream and cheese. I wouldn't put the cream in at all now and crumble the cheese in at the end. As you can tell I'm a fairy random cook!
Celery & cauliflower. 1 head celery, 1 cauliflower, 2 veg oxo cubes, water to cover, salt & pepper to taste. Cook, then liquidise. Add grated cheddar for extra taste & thickness.
No stock (and definitely no commercial stock cubes) in veg soups is a tip I got from a chef at Raymond Blanc's Le Manoir when he was doing demos at a local food festival - I've never looked back.
