1lb strong plain flour
1 tsp salt
5oz lard
2oz sugar
1/2 pint warm milk
1oz fresh yeast
filling
8oz currants
4oz sultanas
4oz soft brown sugar
1 tsp mixed spice
Method
sift flour and salt, rub in 1oz of lard. Cream white sugar, milk and yeast , pour into flour mixture, mix vigerously to form a smooth dough. Cover with clingfilm and leave to rise in warm place for 30 mins. Knead in the fruits, cover and leave for 10 mins.
Roll onto a floured board into a 18" x 6" .Soften remaining lard and spread over top two thirds of dough.Sprinkle on the brown sugar and spice.Fold up bottom third, then fold down top third. Roll out to original sizeand then roll up like a swiss roll.Cut in half and place each half ( cut side up) in a greased 6" (deep sided) cake tin.Cover and leave in warm place for an hour.
Bake in hot oven 220C 425F or gas 7 for 30 mins.Turn out immediatly onto a plate ( not rack) , allow any fat to run over cakes.
