This is the best recipe I've ever found for Tiramisu. It's my sister's recipe - so thanks Pam!

4 Tblsp Rum & 4 Fl.oz Coffee
2 Tblsp Brandy
16 to 20 Sponge fingers
14oz Marscapone Cheese
2 eggs
4Tblsp sugar
3 to 4oz chocolate (or cocoa)
Mix 2tblsp rum, with all the brandy and coffee. Place liquid in a bowl
Dip in all the sponge fingers, one at a time (until soaked but not soggy)
Use these to line the bottom of your dish (or individual dishes)
Pour the rest of the liquid over them.
Beat cheese, egg yolks and sugar togther. Add the rest of the rum to this mixture.
Whisk egg whites until 'peaky'.
Gently fold into the cheese mixture and spoon this over the sponge fingers.
Now decorate with grated chocloate or dust with cocoa powder.
Place in fridge to set (and resist temptation to eat it all before the guests arrive!)
NB. I often substitute a coffee liquor for the alcohol - as I'm not too keen on brandy. AND you can make this the night before - to save on time, but dust them just before you serve).
