Why is it that the labels on Jam (and other similar stuff that you used to be able to leave in cupboards) now says the jar has to be refridgerated once opened?

because when you buy it it is vacuumed packed and once you open it to the air bacteria enters so you need to refridgerate to keep these to a minimum.
