Is what we’re having this evening.
The turkey is the frozen leftovers from Christmas, with softened leeks and mushrooms added, and stock, cream and seasoning. Topped with savoury crumble, also frozen leftovers from Christmas. Served with a mix of vegetable oven roasted chips...carrots, parsnips and swede.
As we have visitors it’s been a very easy meal to make. And has made lots of room in the freezer.
Preceded by prawn cocktail as a special request. And followed by brioche bread and butter pud.
Anyone else got stuff still in the freezer from Christmas?
You’ll never know jackdaw ;)
Think I still have some Swedish meatballs in the freezer Rosie, and a recipe you suggested for a sauce which I’ve never made. Must dig them out.
I still have plenty beef in the frezzer as I bought and cooked a largeish joint then got invited out for Christmas, also pots of stock from the joint too - that's for tomorrow.
I just make a very buttery crumble mix, without the sugar obviously, then add whatever nuts and seeds I have in. In this case it’s got sliced almonds and chopped almonds, walnuts, hazelnuts, pine nuts. Then a load of finely grated Parmesan and some paprika. I’m sorry I can’t be more precise about amounts but I don’t measure anything.
Having heard the description, I think it sounds really nice (if only you'd given it a posh French name!). I've got lots of dried cranberries, which I would have chopped and added to the topping.
The only thing we have left is chocolate. Last weekend I chopped up a whole box of M&S luxury mince pies and put them out for the birds. Was all gone in a couple of hours.
The crumble sounds nice. I`ve got some raw cocktail sausages in the freezer that I never cooked so I`m going to take the meat out of the skins and have them with tomorrow's roast chicken (this post has just reminded me to do that)
The leeks sound revolting but the rest of it sounds quite nice. Sort of thing I'd eat.
Tonight we're just having some nibbles. Duck rolls, samosas, that sort of thing. We had lunch out today with family and I had salmon with roasted vegetables, so don't really want much this evening.
Am on my way mamy, can’t resist a roast.
I think this is the first year we didn’t have a mince pie in the house Prudie.
There you go sj, these dinner threads are sometimes useful, despite what some would say. Enjoy your grub.
