As were away soon, I needed to use up veg in the fridge.
I used a whole celeriac, four large parsnips, a load of bendy carrots, two large onions, and about six celery sticks. All boiled up in veg stock, half a carton of double cream added once it was cooked and blitzed.
And very nice it is too. Wasn’t sure if the parsnips would over power everything but they don’t, they just give it a sort of sweetness but the celeriac and celery save it from being too sweet.
Just goes to show, be a bit adventurous and use stuff up instead of throwing it away.
In her cheating series St Delia made a soup using a bag of watercress, rocket and spinach, wilted in some stock and milk. She then added frozen mash potato and blitzed it, I often make it, not frozen mash of course. Aldi has a small bag of the greens for about 70p and it makes enough for 4. It's called Green Soup in our circle!

My wife would approve of that soup no error. We are fortunate to have a large Turkish run hypermarket on our local high street and they sell bulk trays of vine tomatoes in 3kg trays for about £2.49. She blitzes the Toms and freezes them for her soup concoctions. I love celeriac but she doesn't. :-) Being a carnivore myself I prefer cooking Oxtail or Kidney and Mulligatawny soup. Must have meat in my soup. Pea and Ham is great or London Particular is excellent.
