Why do vegans and vegetarians want to eat veggies prepared in a way that resembles meat? In every supermarket there are veggie and vegan sausages, burgers, pies, something resembling chicken poppers or goujons!
There are lovely vegan and veggie dishes in their own right - aubergine parmigiana, veg lasagne, curries etc. Tasty vegan soups. Beetroot burgers look dreadful, just roast it! Perhaps someone would enlighten me.

Funny that they do not eat meat but want to call their products meat names. You would think that this would be the last thing they would want to do

Why do carnivores want their meat products in a convenient size and shape? Why not just hold a full chicken carcass and bite off what they want? Or keep a roast pig in the kitchen to pick at whenever? Why are sausages carrot-shaped?
Having made these arbitrary decisions, surely it is only right that they should make every attempt to ridicule vegetarians for wanting food in similarly convenient portions?

As a fairly recent vegetarian, I can't really answer this. I don't intentionally seek out food that 'resembles' meat in its outlook, it's just that this is the way it comes in supermarkets and damn tasty some of it is as well ! I love Greggs vegan 'sausage' rolls and that is just how they come - what should I do, tell Greggs to rename and reshape them ??? Personally, I think your question is totally unnecessary - sorry.
The point I tried to make earlier is that why cannot a vegetable recipe be called a 'burger' when it is clearly burger shaped.
We don't hear folk saying we can't use the word with things other than meat.
