Hi cookery ABers out there, I've just cooked some gooseberries (straight from my friend's garden), and after draining the fruit (as per my gooseberry recipe), there's about 2 litres of juice/cooking liquid left. Any ideas of what I can do with this juice - really don't want to chuck it all away ... any ideas folks? cheers, Chox.

Cocktails.
Can you add gelatin for gooseberry jelly ?
Reduce to half the volume and add arrowroot to thicken to make a glossy sauce for ice cream
freeze it with a bit of sugar and serve as granita

Love all your ideas, everyone - especially the gooseberry jelly, the granita and the sauce. We don't do home made wines in this household, I'm afraid, and neither of us are into cocktails, but really appreciate your suggestions! Cheers, Chox.
