Is it possible to freeze spring greens. Have just bought some from the supermarket and there is far too much for the two of us

I dont think they would freeze, but you cook them up with some leeks and mash potato and freeze it down as Bubble and Squeak.
When steamed (the best way to cook) the volume will shrink considerably. Cook them all and refrigerate the rest - they'll last for several days.
They really won't be same if you freeze from fresh...though you could freeze the unused cooked ones.
According to the book 'Will it Freeze' you can freeze cabbage( which is near to spring greens.
Wash it and shred it, blanch it in plenty of boiling water for 2 minutes.Cool rapidly in ice cold water, drain and rfeeze in freezer bags.
I freeze it exactly the way danny has described and freeze it in individual portions in small bags.
To cook, I pierce a hole in the bag and microwave from frozen for a couple of minutes.
Just look at any supermarket and if they sell it frozen you can freeze it.
Yes, of course, you CAN freeze spring greens....but (as I said) they won't be quite the same when cooked as the fresh ones.
I feel sure I've seen frozen greens at the supermarket. Freeze quickly to avoid large ice crystals.
I treat like cabbage...blanch, drain, bag up. Do it all the time at work. I've even just put the bag of greens or spinach in the freezer. Spinach gets added to curries.
As for not the same as fresh...no veg is once frozen.
^^well, some veg (imo) fare well when frozen....sweetcorn, peas, broad beans. Others, like broccoli and cauliflower, not so well.
Carrots are a big no no as well.

I was pleasantly surprised with frozen spinach.
I use frozen leaf spinach all the time. Nice to add a few cubes into a curry towards the end of cooking.
Sometimes it's just better to compost than keep something of no value for ages by burning fuel.
We have had spinnach and chard tonight in a stir fry .. it was picked fresh this afternoon. As always we pick too much. We never bother freezing it as it is easy to store it and keep it dry and fresh in the fridge.
Wash it and dry it, then stack it flat in a polythene bag in usable portions. Remove all the air from the bag by pressing it with a book or something flat. Seal the bag tightly with a bag tie. It will stay fresh for 2-3 weeks in the fridge.

I tried the freezing herbs in ice cube trays. I won't bother again!
