Yesterday they sent me an email about various things but amongst it all was a recipe for Chickpea Bake with Oat and Almond crumble.
The base has in it onion, chopped tomatoes, garlic, sweet potato and spinach. And two tins of chickpeas. Topping is porridge oats and chopped almonds, and some type of butter or spread.
I’ve just made both parts and will assemble it later, and shove it under the grill when we’re ready to eat.
My stash of chickpeas is dwindling :)

This was a very easy one and I happened to have everything in, even a bag of spinach which I don’t usually buy.
We watched Mary Berry on tv last night, as she pottered down the Thames, and have ordered the necessary bits and bobs in our click and collect to make her Thai style salmon with roasted veg, which looked very tasty and very quick and easy, and also one pot!

Thanks for that mamy, I really ought to learn how to do links :/ I don’t suppose you could put Mary Berry’s Thai style salmon and roasted veg one up too could you? I think it deserves a look.
I tweaked the Co-op one slightly, added some chilli flakes to the bottom bit, and some grated cheese and cayenne to the crumble part.
