Leek And Potato Soup Recipe

I have been making this soup for years. Out of curiousity I checked youtube to look at a couple of recipes, and was horrified!! Everybody discards the green part of the leeks!! why?? Its the best part of the vegetable. Rant over.

My speciality, leek+spud soup. Just like those fools on youtube, i used to always throw away the long green bits. Anyway just as i was about to bin them, my french friend, shouted something to me in french, i´m sure PP would have some idea what she said. Anyway the soup was so much better and as she said repeatedly in french " healthier"
