Chickpea And Cauliflower Curry

Have this bubbling away on the hob for later.
Not going vegetarian or vegan but just trying to eat less red meat, although this curry would, I think, fit into the vegan category for anyone interested.

I'm doing a chickpea, cauliflower and butternut squash curry tonight , along with a Beef Madras cos the 'boys' would not be pleased if they had to eat a meal without any meat. Think I may make some gluten free flat breads to go with it.

Love a beef madras, do you use shin beef?

I find it good for curry.

I normally would use shin beef but I had a piece of rump in the bottom of the freezer -too small to roast too large for a steak so thats gone into the pot cut up with shallots mixed frozen peppers, tinned tomatoes and a jar of Pataks madras paste (with extra chillis).
