All peppers are the same, just different stages of ripening. Green is unripe, red is fully ripe and yellow/ orange is in between. I honestly thought they were different species.#needtogetoutmore

They also tend to be sweeter as they ripen. I'm not a fan of green ones. I also find the long pointed red ones to be sweeter than red bell peppers.

Mamy...this happened this week with a very fresh green pepper. I feel a bit of a cruel streak, as if I've cut a life short! Nuts, or what?

Sometimes you get them beginning their colour change in the supermarket.
I like the green ones best.

No they aren't sweet, they're not ready are they.

I like green peppers in a beef madras but usually use red for most dishes.

They don't ripen off the stem. Once picked, a green pepper will always remain green.

Actually capsicums, called bell peppers, are a different species to peppers.

The Royal Horticultural Society doesn't agree with you, Smow (and I don't, either!)

All sweet peppers are green before they're ripe. The most common varieties turn red when they're ripe but others turn orange or yellow. (There are also some lesser-known varieties which are purple or white when they're ripe).

So there are green peppers that turn red, green peppers that turn yellow and green peppers that turn orange but there aren't any that go through an orange or yellow stage to get from green to red. You're mixing them up with traffic lights ;-)
