Scrambled eggs on toast, am saving myself for all the cooking ahead in the next week while the family (including a pregnant one) are with us.
I have a whole week of meals planned out, shopping included.
Am I looking forward to it.....you bet!! :)

We were going to have tuna and avocado salad but we've decided to be naughty now and have a takeaway.

I'll save the salad for tomorrow when it's scorching...

Chicken thighs on a bed of Jersey Royals, red peppers, red onions and tomatoes/mushrooms to be added soon, lots of thyme, mustard seeds and the chicken having been marinated....a plethora of greens to be steamed or roasted.

Oh we will, we all enjoy our food and I enjoy taking the pressure off the family who are staying, to cook for them, and of course to entertain the little one and allow mum and dad a lie in, especially mum who has been a tad tired and nauseous until fairly recently.
He had homemade cheese burgers and I had homemade bean burger

I've had an egg yolk and some mushrooms.

I e just eaten a whole load of sweet potato crisps too, that’ll teach me for drinking too much before a meal and getting the munchies afterwards.

The bean burger was lovely i added nuts too for added protein
chicken, leeks and mushrooms fried together. chicken stock and creme fraiche, panko breadcrumbs with cheese on top and grilled

J'adore brinjal bhaji...
It was a packet of epicure mix beans that I roughly mashed, added finely chopped garlic and some blitzed mixed nuts and some fresh thyme mixed in a fresh egg and shaped into patties.
I then blitzed some more nuts and a slice of toasted rye bread.
I coated the patties in the breadcrumb mix and chilled.
Lightly fried then finish off in the oven.
The mix beans were chick peas, borlotti, black, kidney and butter beans.
