if you were coming to my house for dinner and everyone else was having a roast beef dinner, what would you want as an alternative to the beef?

Cauliflower Cheese.
Linda Macartney does a frozen veggie chicken or meat roll that you pop in the oven and carve. Grandkids love it
Vegetarians are NOT fussy eaters.

I'm not vegetarian myself, though I have cut my meat consumption.
I'd be quite happy with just the vegetables.
Richmond Sausages now do meat free ones and they are delicious. You could maybe do some of those for them.
We have two vegetarians and a vegan in our close family.
When I’m catering for all of us, meat eaters too, then I provide a vegetarian alternative to the meat, and the vegan will either eat that or just the veg. She doesn’t like to be a nuisance so is a bit flexible when she’s being catered for at someone else’s house.
I wouldn't ask for anything special unless it was suggested by the host. I'd just eat whatever was non-meat. Just as someone who hates broccoli probably wouldn't come to my house and demand carrots instead.
I wouldn't expect special food, I would just have the meal without the meat.
I am a vegetarian and would be happy with a bean burger that just goes in the oven.
I do cater for non vegetarians.
I am not a fussy eater just because I don’t want to eat dead animals.
