what is a healthy dinner that is easy to cook most importantly easy to wash up i dont want to be using 4 pans and a steamer one pan and one pot / steamer would be good enough you see i dont have a dish washer cooking for just one or two people as well it can be hard
i like rice dishes but something easy and also accessible please dont recommend some curry ingredient you can only find on amazon or some small niche corner shop in london

Do you have a microwave oven as a jacket potato is a quick and reasonably healthy starting point? You could have it with chicken breast or a chop and vegetables or any of various toppings.
Chicken breast or pork, ready prepared stir fry veg cooked in one pan with a drop of hoisin or other sauce is quick.
Use a slow cooker for easy all in one casseroles and stews. Put it on in the morning and it's ready in the evening when you can't be bothered to cook.

I make casseroles quite often, but there is still loads of washing up to do preparing the meat, veg and casserole mix before it goes in the slow cooker. Then of course you have the slow cooker to clean.
The best days are the ones when I can just take a casserole out of the freezer and the only washing up is the casserole dish!

If you are by yourself and don't have a proper 'stack' steamer (worth getting though), then take a metal sieve and put your veg or feed them into it to steam for the proper time - potatoes could even go in the bottom of the pan if you don't want them steamed...... one other pan for cooking your meat and I have frying pans, one with ridges, one without that I can put in the oven too..... A great alternative is a good terracotta 'flat' dish that can take things like chicken thighs along with a range of veg from new potatoes to shallots, tomatoes, even mushrooms, root veg etc and bake off in the same pot - and mine cleans up 'just like that'.....
